Indulge in the smoky flavors of chipotle with these hearty and healthy veggie burritos. Packed with a variety of vegetables, black beans, and rice, they’re a perfect meal for any day of the week.

Ingredients
4 large flour tortillas
1 cup cooked rice (brown or white)
1 can black beans, drained and rinsed
1 cup corn kernels (fresh, canned, or thawed from frozen)
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
2 cloves garlic, minced
1 tablespoon chipotle in adobo sauce, finely chopped
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon olive oil
Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole, salsa
Preparation
Steps
In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
Add the bell peppers and sauté for another 5 minutes until they start to soften.
Stir in the corn, black beans, chipotle in adobo sauce, cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
Warm the tortillas in a dry pan or microwave to make them pliable.
Lay out the tortillas and divide the rice and veggie mixture evenly among them.
Add any additional toppings you like.
Roll up the burritos by folding the sides over the filling, then rolling from the bottom up.
If desired, you can grill the burritos in a pan for a couple of minutes on each side to crisp up the tortilla.
Serve immediately with your choice of sides or sauces.
