  • 2 large eggs

  • 2 slices of whole grain bread

  • 1 ripe avocado

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • Red pepper flakes (optional)

  • Fresh herbs (optional, such as parsley or chives)

  • Olive oil (optional, for drizzling)

1. Prepare the Avocado Spread:

  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

  • -Add the lemon juice, salt, and pepper to taste.

  • Mash the avocado with a fork until it reaches your desired consistency (smooth or chunky).

  • Optional: Mix in some finely chopped fresh herbs for extra flavor.


2. Toast the Bread:

  • Toast the slices of whole grain bread until they are golden and crispy.


3. Poach the Eggs:

  • Fill a medium saucepan with water and bring it to a gentle simmer.

  • Add a splash of vinegar to the water (optional, helps the egg whites to coagulate).

  • Crack each egg into a small bowl or ramekin.

  • Create a gentle whirlpool in the water using a spoon.

  • Carefully slide one egg into the center of the whirlpool and let it cook for about 3-4 minutes, until the whites are set but the yolk is still runny.

  • Use a slotted spoon to remove the poached egg and set it on a paper towel to drain.

  • Repeat with the second egg.


4. Assemble the Avocado Toast:

  • Spread a generous amount of the mashed avocado on each slice of toasted bread.

  • Place a poached egg on top of the avocado spread.


5. Finish and Serve:

  • Sprinkle with additional salt, pepper, and red pepper flakes if desired.

  • Drizzle with a little olive oil (optional).

  • Garnish with more fresh herbs if using.
