1. Prepare the Avocado Spread:
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

Mash the avocado with a fork until it reaches your desired consistency (smooth or chunky).
Optional: Mix in some finely chopped fresh herbs for extra flavor.
2. Toast the Bread:
Toast the slices of whole grain bread until they are golden and crispy.
3. Poach the Eggs:
Fill a medium saucepan with water and bring it to a gentle simmer.
Add a splash of vinegar to the water (optional, helps the egg whites to coagulate).
Crack each egg into a small bowl or ramekin.
Create a gentle whirlpool in the water using a spoon.
Carefully slide one egg into the center of the whirlpool and let it cook for about 3-4 minutes, until the whites are set but the yolk is still runny.
Use a slotted spoon to remove the poached egg and set it on a paper towel to drain.
Repeat with the second egg.
4. Assemble the Avocado Toast:
Spread a generous amount of the mashed avocado on each slice of toasted bread.
Place a poached egg on top of the avocado spread.
5. Finish and Serve:
Sprinkle with additional salt, pepper, and red pepper flakes if desired.
